Answer:
'Single-release' SH51 cleats will unclip in either direction i.e. both inwards and outwards while the alternative 'multi-release' SH56 cleats will unclip with a rolling action - again both inwards and outwards but the modern SH56 cleats also unclip if you pull up hard so better if on fixed wheel bike or when you may be needing to unclip in a hurry.

Answer:
These pedals require a specific Shimano replacement set of pins which include a spacer for each pin.

We don't stock them at this time however the Part Number is:

ShimanoY46R98050 (supplied in a pack of 9-Pins).

Answer:
I've had these pedals into the office to inspect and they run 4.6mm pins, which are a non-standard size. I don't know of any alternative pedal pins which will fit these Hope pedals; if you contact Hope directly they may be able to offer you advice regarding possible alternatives.

Answer:
The Cyclo Tour and Cyclo Tour Sport use the Mavic 'Tour Grip Outsole' which accepts the standard 2-bolt MTB cleat (image below for reference)

Clipless pedals are supplied with a set of their corresponding cleats, rather than shoes.

Answer:
The 'Brendog' edition are the same pedal, but signed and coated in a Stealth Black paint.

If you are a lover of Low Profile Stealth Black pedals then they could be worth the extra cash; however the Standard Vaults are the same in design and performance.
