wrong amount of links

On my current bike from the shop there is 105 links ending with one male at each side put together by a link. Does it work to just chop it off to get the correct amount of links? If so, is this difficult?
And again, if it work does it matter if I buy the shortest or longest chain?

You can shorten any chain with the use of a chain breaker tool (it is quite normal to need to shorten a new chain); 110 links is usually enough for a Double ring setup, and 116 links is for Triples.

Answer: 
So your existing chain is 105 links plus a power / quick link to join it. You can purchase any length greater than this and shorten it to suit using an appropriate chain tool.
Shimanio chains come with a singe joining pin to link the chain back together with a chain tool. SRAM & KMC chains come with a new power / quick link as you have already to join the new chain. It is not recommended to re-use your old power / quick link as this will have worn along with the old chain.
Chains are generally sold in longer lengths so that they can fit pretty much any bike, but what ever make you go for you will need a chain tool to remove the spare links so that it will fit your bike.

10 speed is slightly narrower than 8/9sp so your chain would be more prone to dropping during shifts/ less efficient. Ideally you should use a 9sp chain for a 9sp chainset.

i have FC-4603 175MM 30-39-50 tiagra crankset on my bike, i have bought one of these 5701 chains and maybe that was my mistake as people say these arent compatible with the cranks on the bike.

We do not have spare links available as they are not supplied by Shimano.

Quick Links are available if re-connecting the chain is the only issue causing problems with the drivetrain.

I used a KNC Shimano compatible quick link and it worked a treat (have also used with Ultegra chain). As for the length of chain, if your not sure go too long - you can always remove the excess links.
