Answer: 
Yes; 10sp is narrower than 8/9sp so these cassettes will fit fine. You will need to fit a 1mm spacer to take up the extra room before you install the cassette. Many 10sp cassettes are supplied with this spacer already, but they can be purchased separately if required.

Answer: 
Yes this freehub body fit with the M525 with a 10speeds cassette, i've replace my freehub body on my m525 with this one (i'm also using a 10speed shimano k7).
I'm pretty sure that all the Shimano 10speeds cassettes use the same system.

No; the RS80 freehub is Shimano #Y4DV98110 which is not 11sp compatible. As 11sp is wider than 10sp you would need to get your wheels re-dished in order to run an 11sp hub on the rear. You would likely need to replace your rear hub with an 11sp hub as well, so it may be more cost effective to buy a new 11sp ready rear wheel.

No, the fixing bolt is not included with freehub bodies as standard. The freehub is Shimano part 3A3 9802 (Part 10 on the linked document below), while the Fixing Bolt is Part 9 (Shimano Part 3BL 0300) which you should be able to source elsewhere online without much trouble.
