Since you only have one chain ring in front, you should have enough with a medium cage. At least, with a normal sized cassette.

Yes; the Medium cage mech should be plenty to run with a single 1x10 setup as you propose (and most 2x10); the Long cage is suitable for 3x10sp setups.

Answer: 
I would say medium with two chainrings and long with three chainrings. This is only a simple rule and it is affected by the amount of teeth difference between the two chainrings. If the chainrings are sized pretty much normally, this little rule will work.

Triple Chainset = Long Cage
Double Chainset = Medium Cage
Single Chainset = Short Cage.

You have both options, if you want bolt-on, you just have to install it as it is. If you want direct mount, you must loosen the torx bolt that holds the small tab for the bolt on option. Take that tab out and there is your gap for the direct mount.

My tourer has ST-5703 shifters, 50/39/30 chain rings with RD-5701 GS rear mech with 30-12T cassette, I need a bigger cassette 36 or 32-11T cassette would be better for my tourer (bigger would be better for big hills when fully loaded with trailer) but can only use a 3T cassette with 105 mech.

Was wondering if the RD-M610 / M615 works with 105 5703 STIs? and what is the biggest cassette I can use.

This derailleur should work perfectly with that setup because the only pull ratio difference exists between Shimano and SRAM, not between the models of an individual brand. Since this mech is designed for mountainbike use, you should be fine with any road casette with the medium cage length, if you have hugely different seize chainrings I would reccommend the long cage.
