These XC wheels are lightweight, strong and durable with a 19C (23.4mm width) UST Tubeless and tubed tyre compatible rim for use with 1.5 - 2.25 inch tyres.

XT cross country disc wheel system brings high performance technology to a affordable price point. The hub uses angular contact bearings designed to cradle the balls giving both radial and lateral support for superior strength and durability in real world riding conditions. They also offer precision bearing adjustment and easy maintenance.

Rated 3 out of 5 by Cheapened build I owned a set of the previous model (775) and the hubs for these are very well made with easy maintenance and very robust dust seals. Contrary to what the blurb says for the 785/788 models the front 15mm hub is practically impossible to service as the locknut on the right hand side is not removable so you can't get to the bearing race properly to clean it. This side also has no proper dust seal. Consequently my front wheel now has pitted cones and probably races after only 6 months use! It seems to make these wheels lighter and cheaper, which they are, Shimano have left out a couple of critical design features that the previous model had. Bad move! 04 October 2012

I bought a set of these for my hybrid bike. Reading the vast amount of safety details included with the wheels I notice the small print "the air pressure should be in the range of 200-400kPa (29-58 psi). The tyres will go to 130 psi. Will I pop the rims at 100 psi?

With a 19c rim, the narrowest 700c tyre you can safely fit to these wheels is a 28c, so your proposed 700x23c tyre will not be suitable.
As for the air pressure, the rims are designed as MTB wheels with MTB tyres in mind, so the sidewall may well fail if you run anything as high as 100psi. The manufacturer suggestion of 29-58 should be adhered to wherever possible as the rims have been tested to various tolerances (this rim may experience issues at 75psi and above so they would have listed the limit as well below this).
